If your kids are anything like mine, they LIVE for popsicles. And while they are such a fun summertime treat, I hate to think of all the unnecessary sugar I am giving them. So on a quest to be in a bit more control, I started making our own popsicles at home, and it has been such a fun thing to do for them!
We use these amazing popsicle molds that my sister gave us that have a basin that catches the drips and allows you to suck it up through the built in straw. Less mess = happy momma. Sadly, she doesn’t remember where she bought them or I would pass on that bit of info to you. Also, I try to keep it as simple (i.e. as few ingredients/steps) as possible. Basically, most of my “recipes” (if you can even call them that) involve only one fruit and one base. The sky is the limit with making these treats, and creativity is a must!
A few of our favorites are:
Strawberry Lemonade Pops
- Cut up strawberries and put them in the mold (use as many as you like)
- Add your favorite strawberry (or regular) lemonade to fill the molds. I usually buy Organic Strawberry Lemonade, but this is just as tasty with homemade lemonade as well!
- Freeze and enjoy
(White Grape Juice with either peaches or grapes is very tasty too.)
Frozen Yogurt Pops
- Start with Plain Greek Yogurt (I use Cabot Plain 10%)
- Add honey to taste (Our family enjoys Wildflower Honey best)
- Stir well to incorporate honey
- Stir in fruit of choice cut into bite sized pieces
- Spoon into molds and freeze
And because sometimes you just need an adult Popsicle…
Bellini Pops
- Puree the flesh of 1-2 peaches (If your peaches aren’t very sweet, add a little sweetener, and also a splash of lemon juice)-Would work great with Strawberry puree too!
- Add to mold
- Finish filling mold with Prosecco and freeze
- ENJOY!!!
